A renovation project of a Kyoto townhouse near the imperial palace into a French restaurant.
Chef Alexis Moko's cuisine carefully considers the seasonal flavors of local vegetables and game, and while adhering to orthodox, classic French techniques, he adds a modern, sophisticated and skillful twist.
While maintaining the traditional Kyoto flavor in the architecture and garden, we aimed for an ageless spatial design with details that make use of the presence of natural materials.
御所近くに残る京町家の、フレンチレストランへのリノベーションプロジェクト。
シェフAlexis Moko氏の料理は、地元の野菜やジビエの季節感を吟味し、正統で古典的なフレンチの手法を守りながらも、現代的に洗練された巧みなアレンジを加える。
伝統的な京の趣を建築と庭園に維持しながら、自然素材の存在感を活かしたディテール、エイジレスな空間デザインを目指した。（津田朋延）
